Salsa: It's What's For Breakfast

Stay tuned for the newest rhyming recipe from Billy's Wild Salsa Cookbook, Tex-Mex For Rednecks And The Adventurers Of The Wild Salsa Gang:

Wild Salsa Omelets

Two eggs from a chicken
and real American cheese,
three leaves of fresh basil,
and parsley if you please,
garlic in a powder,
salt and pepper too.
Butter is much better
but margarine will do.

Pour a shot of whole fresh milk.
You’ll not want any curd.
Then beat it all together.
No, it’s not absurd.
Get down your favorite skillet,
melt the butter in it there.
Then pour the rest right in it
and take a breath of air.

Fry it ‘til it’s barely browned.
The bottom will brown first.
You see, you’ll have to flip it
and might need to rehearse.
Pour it out onto a plate,
pour salsa on the top.
I bet that you’ll eat every bite
and never want to stop.

Billy, try a spinach, mushroom, red pepper, and asparagus omelete all covered with salsa. When getting the eggs ready load them with Texas Pete to the point of turning them red.
